Chicken bones are high in Chondroitin and Glucosamine, which aids in the preservation of joint function and repair, extending the healthful life cycles of our bones, teeth and cartilage.
 
Research is showing that concentrated Chicken Broth may be good for heart health, as it may reduce heart swelling and decrease the thickening of blood vessels. 

Researchers extracted collagen from chicken legs and tested its ability to act as an ACE inhibitor in laboratory studies, showing the proteins may produce a significant and prolonged blood pressure decrease.


Other research has shown that Chicken Stock has anti-inflammatory properties, which helps boost your immune and relieves symptoms of colds and flu. It contains large amounts of the amino acid cysteine, which will thin mucous and help one breathe better during a cold.

Onions - an excellent antioxidant, containing anti-allergy, antiviral and antihistamine properties.
Sulfur compounds in onions help to detoxify the body.
Aids in cellular repair.
Onions are a rich source of quercetin, a potent antioxidant.
 
Kale - eases lung congestion
and boosts the immune system.
Contains lutein and zeaxanthin, which protect the eyes from macular degeneration.  Also contains indole-3-carbinol, which may protect against colon cancer.  An excellent source of calcium, iron, vitamins A and C, chlorophyll, & antioxidants.

Step One: (optional) In a large pot, boil a Chicken with purified water. Remove chicken and de-bone. The meat can be added back to the soup, or used in other dishes.

 Vegetable Stock

Sauté' onions, garlic, and celery until golden brown.

Add water.

The sautéing of the onions and garlic will impart a wonderful flavor to your broth.
 
Use Chicken Stock as your base.
 
A vegetable broth can be used instead.
  
Step Two: Add any of the following to your Chicken Stock:

Garlic, Onions, Carrots, Celery, Kale, etc. (any and all vegetables) - cut into small chunks
Seaweed - 1/8 to 1/2 cup
Potato Peelings (just under the peeling contains a valuable source of potassium)
 
Season to taste (don't forget rosemary, thyme, parsley, and sage)

Step Three:  Bring this mixture almost to a boil, lower to a simmer. Simmer for 20-30 minutes.

Drink this broth 1 - 4+ times a day. 
 
Can be stored in your refrigerator for approximately 5 days. Be sure to heat the broth on your stove, NOT the microwave.

RosemaryThyme
  • Stimulates the liver and digestion.
  • A good decongestant.
  • Kills bacteria.
  • Promotes circulation while reducing stress.
 
Sage
  • Anti-inflammatory-recommended for persons with inflammatory conditions (like rheumatoid arthritis),as well as bronchial asthma, and atherosclerosis.
  • Anti-oxidant properties
  • Better brain function! Improves memory.



Parsley

  • Is useful as a digestive aid.
  • Helps to purify the blood and stimulate the bowels.
  • Contains three times as much vitamin C as oranges, and twice as much iron as spinach, contains vitamin A and is a good source of copper and manganese.

Thyme
  • Anti-inflammatory,  
  • Useful for colds and sinus, asthma, bronchitis, flu, etc.
  • Assists with fevers, headaches, sore Rosemarythroats. Fights infections.
  • A good liver tonic and digestive aid.
